Kandungan Indeks Glikemik Dan Beban Glikemik Beras Lokal Hanyar Dan Usang

Prevalensi Diabetes Mellitus di Provinsi Kalimantan Selatan cenderung meningkat yaitu dari 1.0% pada tahun 2007 menjadi 1.4% pada tahun 2013. Makanan Indeks Glikemik (IG) rendah mampu memperbaiki sensitivitas insulin serta menurunkan laju penyerapan glukosa, sehingga bermanfaat dalam pengendalian glukosa darah penderita DM. Tujuan dari penelitian ini adalah mempelajari perbedaan Indeks Glikemik dan Beban Glikemik pada beras lokal hanyar dan usang. Penelitian ini merupakan jenis penelitian eksperimen. Data yang diharapkan didapat adalah yaitu nilai Indeks Glikemik dan Beban Glikemik. Desain pada penelitian ini adalah Post Test-only Control Group Design menggunakan control tanpa penugasan random.
Hasil uji indeks glikemik didapatkan nilai IG tertinggi pada nasi dari beras karang dukuh usang yaitu sebesar 120.31%, dan terendah pada nasi dari beras unus hanyar yaitu sebesar 87.15%. Hasil beban glikemik didapatkan nilai BG tertinggi pada nasi dari beras karang dukuh usang yaitu sebesar 25.75%, dan terendah pada nasi dari beras karang dukuh hanyar yaitu sebesar 19.26. Kesimpulan dalam penelitian ini adalah ada beda kandungan indeks glikemik dan beban glikemik pada nasi dari beras lokal hanyar dan usang
